Ingredients
  

Fresh Ingredients
  • 4 pieces ripe tomatoes, diced Use the ripest tomatoes for the best flavor.
  • 3 cloves garlic, minced Roast for a mellower flavor if desired.
  • 1/4 cup fresh basil, chopped Substitute with other fresh herbs if necessary.
  • 1/4 cup fresh parsley, chopped Can be substituted with mint or chives.
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the diced tomatoes and minced garlic.
  2. Add in the chopped basil and parsley.
Dressing
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  2. Pour the dressing over the tomato mixture and toss gently to combine.
Serving
  1. Serve immediately or chill in the refrigerator for about 30 minutes.

Notes

Add feta cheese for extra flavor or a pinch of red pepper flakes for spice. Store leftovers in an airtight container in the fridge for up to 2 days.
