Ingredients
  

For the Granola Cups
  • 1.5 cups old-fashioned oats Provides the base for the cups.
  • 0.75 cups peanut butter Smooth or crunchy, adds flavor and texture.
  • 3 tablespoons maple syrup Natural sweetener to bind the mixture.
For Filling and Topping
  • 2 cups vanilla yogurt The creamy filling that complements the cups.
  • Fresh raspberries or your favorite berries Adds natural sweetness and color.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and prepare your muffin tin with a smidge of cooking spray.
  2. In a large bowl, combine old-fashioned oats, peanut butter, and maple syrup, mixing until well integrated.
  3. Scoop the oat mixture evenly into 6 greased muffin cups, pressing down gently to create cups.
Baking
  1. Place the muffin tin in the heated oven and bake for 12 to 15 minutes until the edges are golden and firm.
  2. Allow the oat cups to cool completely in the muffin tin before removing.
Filling and Serving
  1. Once cool, fill each cup with about 1/4 cup of vanilla yogurt and top with fresh berries.
  2. Serve immediately or chill in the fridge to enjoy later.

Notes

For a nut-free version, swap the peanut butter for sunflower seed butter. Customize with different yogurt flavors or add-ins like chocolate chips or chia seeds. Store leftovers in an airtight container; best to add yogurt just before serving.
