Preparation
- Preheat your oven to 350 degrees F (175 degrees C) and prepare your muffin tin with a smidge of cooking spray.
- In a large bowl, combine old-fashioned oats, peanut butter, and maple syrup, mixing until well integrated.
- Scoop the oat mixture evenly into 6 greased muffin cups, pressing down gently to create cups.
Baking
- Place the muffin tin in the heated oven and bake for 12 to 15 minutes until the edges are golden and firm.
- Allow the oat cups to cool completely in the muffin tin before removing.
Filling and Serving
- Once cool, fill each cup with about 1/4 cup of vanilla yogurt and top with fresh berries.
- Serve immediately or chill in the fridge to enjoy later.
Notes
For a nut-free version, swap the peanut butter for sunflower seed butter. Customize with different yogurt flavors or add-ins like chocolate chips or chia seeds. Store leftovers in an airtight container; best to add yogurt just before serving.
