  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt

  • 1 1/4 cups milk
  • 1/8 cup vegetable oil
  • 1/2 cup butter, softened Bring to room temperature

  • 3 large eggs At room temperature

Method
 

Preparation
  1. Measure the flour into a quart-size mason jar and layer the sugar, baking powder, and salt on top.
  2. Seal the jar to preserve the dry mixture.
Mixing
  1. In a stand mixer bowl, add the softened butter and mix on medium for 1 to 2 minutes.
  2. Add the dry mixture to the bowl and combine for 30 seconds.
  3. Introduce the milk, oil, vanilla extract, and eggs, and whisk on medium-high for 1 minute.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Pour the batter into prepared pans, filling them just below the rim.
  3. Bake until golden: 20 to 25 minutes for 8-inch pans, 15 minutes for cupcakes, and 30 to 38 minutes for a 9x13 dish.
  4. Allow the cakes to cool before frosting.

Notes

Store the cake in an airtight container after it cools to keep it fresh. Consider using almond extract for an added flavor boost.
