- In a large mixing bowl, beat together the softened butter, granulated sugar, salt, and vanilla until smooth.
- Add the egg yolk and mix until well combined.
- Gradually add the flour and mix until a tender dough forms.
- Knead the dough gently on a floured surface until smooth and cohesive.
- Shape the dough into a log, wrap in plastic wrap, and chill in the fridge for 2 hours.
Baking
- Preheat your oven to 325°F (160°C) and line baking sheets with parchment paper.
- Once chilled, slice the dough into 1/8-inch rounds and arrange them on the baking sheets.
- Bake for 16-18 minutes or until the edges turn golden brown.
- Let the cookies cool on a wire rack before serving.
Notes
Store in an airtight container at room temperature for up to a week, or freeze for up to three months. Let thaw before serving.
