  • 8 oz unsalted butter, softened Make sure the butter is at room temperature for a smooth texture.
  • 3/4 cup granulated sugar
  • 1/4 tsp salt Skip or reduce if using salted butter.
  • 1 1/2 tsp pure vanilla extract
  • 1 large egg yolk
  • 2 cups all-purpose flour Gradually add flour to avoid overmixing.

Preparation
  1. In a large mixing bowl, beat together the softened butter, granulated sugar, salt, and vanilla until smooth.
  2. Add the egg yolk and mix until well combined.
  3. Gradually add the flour and mix until a tender dough forms.
  4. Knead the dough gently on a floured surface until smooth and cohesive.
  5. Shape the dough into a log, wrap in plastic wrap, and chill in the fridge for 2 hours.
Baking
  1. Preheat your oven to 325°F (160°C) and line baking sheets with parchment paper.
  2. Once chilled, slice the dough into 1/8-inch rounds and arrange them on the baking sheets.
  3. Bake for 16-18 minutes or until the edges turn golden brown.
  4. Let the cookies cool on a wire rack before serving.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for up to three months. Let thaw before serving.
