Preparation
- Set out cream cheese to let it reach room temperature.
- In a microwave-safe bowl, heat the water until boiling.
- Dissolve the lemon jello in the boiling water and set aside to cool slightly.
- Crush the graham crackers into fine crumbs and mix with the melted butter to form a crust in a 9×13-inch pan.
Mixing
- In a mixing bowl, whip the heavy cream until fluffy and holds soft peaks.
- In another bowl, combine the cream cheese, sugar, and lemon juice until smooth.
- Blend in the cooled jello mixture.
- Gently fold the whipped cream into the cream cheese mixture.
Chilling
- Pour the mixture over the prepared crust.
- Chill the cheesecake for at least 2 hours until set.
- Once set, slice into squares and serve.
Notes
Serve it chilled, garnished with fresh lemon slices, whipped cream, or berries. This cheesecake can be stored in the refrigerator for up to 5 days.
