  • 1 cup sweetened shredded coconut
  • 1 cup whipped cream
  • 1/2 cup cream cheese Softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling Or other fruit filling
  • 1/2 cup chopped nuts Optional

Preparation
  1. Preheat your oven according to pie crust package instructions. Bake the pie crust until golden brown and let it cool completely.
  2. In a medium bowl, mix the cream cheese and powdered sugar until smooth.
  3. Fold in the whipped cream and vanilla extract gently until well combined.
  4. Add the shredded coconut, mixing until evenly distributed.
  5. Pour the mixture into the cooled pie crust.
  6. Top with the cherry pie filling or your choice of fruit filling.
  7. Sprinkle chopped nuts over the top if desired.
  8. Refrigerate for at least 2 hours before serving.

Notes

Consider garnishing with extra whipped cream or a sprinkle of coconut before serving. Store any leftovers in the refrigerator for 3-4 days.
