Pastry Layers
  • 2 sheets store-bought puff pastry, thawed
  • Flour for dusting
Custard
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract (for custard)
Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons milk (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. Dust a clean surface with flour and roll out one sheet of puff pastry into a rectangle slightly larger than the baking dish. Transfer to the dish, prick with a fork, and bake for 15-20 minutes until golden. Let cool.
Making Custard
  1. In a saucepan, heat the milk over medium until it simmers.
  2. In a mixing bowl, whisk together granulated sugar, cornstarch, and egg yolks until smooth. Slowly pour in the hot milk, whisking gently.
  3. Return the mixture to the saucepan and cook until it thickens. Remove from heat and stir in the vanilla extract. Let cool slightly.
  4. Spread the warm custard evenly over the baked pastry.
Assembling and Glazing
  1. Roll out the second sheet of puff pastry and place it over the custard, pressing gently.
  2. In a bowl, whisk together powdered sugar, milk, and vanilla extract for the glaze until smooth. Pour over the pastry and spread evenly.
  3. Refrigerate for at least 1 hour to set before cutting into squares or rectangles.

Notes

For added flavor, consider infusing the milk with citrus zest or a cinnamon stick. Maintain even thickness when rolling out pastry for best results. A sprinkle of sea salt on the glaze can enhance sweetness.
