  • 1 cup unsweetened almond milk or any milk of choice
  • 1 teaspoon pure vanilla extract
  • 1-2 teaspoons maple syrup or honey optional for sweetness
Raspberry Layer
  • ½ cup fresh or frozen raspberries
  • 1 sprig fresh mint leaves for garnish, optional

Method
 

Preparation
  1. In a bowl, mix together the chia seeds, almond milk, vanilla extract, and sweetener if desired. Stir until smooth.
Chill
  1. Cover the mixture and refrigerate for at least 4 hours, stirring after 30 minutes to prevent clumping.
Prepare Raspberry Layer
  1. Smash or blend the raspberries for a textured experience.
Assemble and Serve
  1. Layer the chia pudding with raspberry mash in serving glasses. Top with fresh raspberries and mint.

Notes

For a creamier pudding, blend the chia mixture before chilling. Swap raspberries for other fruits like mango or pineapple. Top with granola or nuts for extra crunch.
