Preparation
- Whip eggs and sugar until fluffy, then fold in flour and melted butter. Bake at 170°C for 12–15 minutes.
- Heat mango purée with sugar, add bloomed gelatin, pour into an insert mold, and freeze.
- Cook milk, vanilla, egg yolks, and sugar until it reaches a beautiful anglaise consistency. Add gelatin, cool slightly, then fold in softly whipped cream.
- Heat milk with vanilla, then add gelatin. Pour over chocolate, blend smooth, and fold in semi-whipped cream.
- Boil water, sugar, and glucose. Add gelatin and condensed milk, pour over chocolate, blend, color, and use at 32–34°C.
Assembly
- Fill the mold with vanilla mousse, insert the frozen mango insert with crémeux layer, add sponge base, and freeze completely.
- Glaze the entire entremet and decorate with juicy mango cubes and elegant vanilla pods.
Notes
Make the mango insert the day before to ensure it’s completely set and easy to work with. Don’t skimp on the quality of white chocolate; the creaminess makes all the difference. If you’re feeling adventurous, try incorporating matcha into the crémeux for an unexpected flavor twist.
