  • 1 cup all purpose flour
  • 1/2 cup unsalted butter, softened Soften at room temperature, not melted.
  • 1/3 cup granulated sugar
  • 1/2 cup fresh strawberries, finely chopped Use very ripe strawberries and pat them dry.
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • to taste powdered sugar for dusting For serving.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Mix in the vanilla extract and fold in chopped strawberries.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry mixture to the wet mixture until just combined.
Baking
  1. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them apart.
  2. Bake for 12-15 minutes until golden around the edges but soft in the center.

Notes

For better shapes, use a small cookie scoop and shape the tops with your fingers. Cookies can be served warm with powdered sugar or with whipped cream and strawberry jam.
