Main Ingredients
  • 1 medium apple (Golden, Gala or Reinette) Choose a firm, sweet-tart apple for balance.
  • 1 large egg
  • 2 tablespoons sugar or honey
  • 1 pinch salt
  • 150 g plain yogurt or fromage blanc
  • 140 g sifted flour Sift flour before adding.
  • 1/2 teaspoon baking powder
  • A little oil or butter for cooking Use a light oil or dab of butter.

Preparation
  1. Peel and finely grate the apple.
  2. In a large bowl, crack the egg and add sugar, salt, and yogurt. Whisk until smooth.
  3. Gradually incorporate the sifted flour and baking powder while mixing to avoid lumps.
  4. Gently fold in the grated apple.
Cooking
  1. Heat a greased non-stick pan and pour a ladle of batter, spreading it into a disc.
  2. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 1-2 minutes.
  3. Repeat until all batter is used.

Notes

Serve warm with honey, maple syrup, powdered sugar, or ice cream. For best texture, do not overcrowd the pan. Make sure to rest the batter for 10-15 minutes before cooking.
