Preparation
- Preheat your oven to 170°C (340°F) and grease and line two 8-inch cake pans.
- In a large bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add the eggs, buttermilk, vegetable oil, and vanilla extract. Mix until smooth.
- Slowly pour in the hot coffee or hot water, mixing gently.
Baking
- Divide the batter into the cake pans and place them in the oven for 30–35 minutes, or until a skewer comes out clean.
- Allow the cakes to cool completely.
Frosting
- Heat the whipping cream until warm, then pour it over the chopped chocolate. Let it sit for 2 minutes, then stir until silky smooth.
- Add the butter and icing sugar, whisking until glossy and thick. Chill slightly until it’s spreadable.
- Layer the cakes with chocolate frosting in between, cover the entire cake, and chill for 20 minutes before slicing.
Notes
Serve with a dollop of whipped cream or ice cream. Store in an airtight container at room temperature for up to 3 days, or in the fridge for a longer shelf life.
