  • 1 box cake mix (yellow or white)
  • 1 box instant pistachio pudding mix
  • 3 large eggs
  • 1/2 cup vegetable oil For added richness, consider using melted butter instead.
  • 1 can pineapple (with juice) Can use fresh pineapple; squeeze out excess juice.
  • 1 cup unsalted pistachios, chopped Omit for a nut-free version.
Toppings
  • whipped cream or cream cheese frosting Optional for serving.
  • shredded coconut Optional for extra tropical flair.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. Grease a 9 by 13 inch baking pan.
  3. In a mixing bowl, combine cake mix and pistachio pudding mix.
  4. Add eggs, vegetable oil, and pineapple with juice; mix until smooth.
  5. Fold in chopped pistachios.
  6. Pour batter into the prepared pan and spread evenly.
Baking
  1. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Allow to cool before slicing.
  2. Top with whipped cream or cream cheese frosting and sprinkle with shredded coconut if desired.

Notes

Store in an airtight container at room temperature for up to three days or in the fridge for up to a week. For a more colorful cake, add vibrant fruit on top or use food coloring in the frosting.
