Preparation
- Preheat your oven to 350°F and line a 9x9 inch baking pan with parchment paper.
- In a large bowl, combine 1.5 cups flour, 0.5 cups coconut, powdered sugar, and salt for the crust.
- Add the cold, cubed butter and blend until the mixture resembles coarse crumbs.
- Press the crust mixture firmly into the prepared pan and bake for 18-20 minutes.
- While the crust bakes, whisk together eggs, granulated sugar, lime juice, lime zest, 2 tablespoons flour, and vanilla extract in a medium bowl.
Baking
- Once the crust is baked, carefully pour the lime filling over the hot crust.
- Return the pan to the oven and bake for an additional 20-25 minutes, until the filling is set but still slightly jiggly.
- Cool completely on a wire rack, then refrigerate for at least 2 hours before slicing.
Notes
For a stronger lime flavor, use fresh lime juice and zest. Serve chilled with mint or ice cream. Store in an airtight container in the fridge for up to 5 days.
