Preparation
- Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Mix in the creamy peanut butter, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Fold in the chocolate chips.
Assembly
- Scoop large dough balls and flatten each slightly into a disc.
- Add a spoonful of peanut butter filling and place a mini Reese’s cup in the center of each disc.
- Cover with more dough, seal the seams, and roll lightly to even out the shape.
Baking
- Bake for 10–12 minutes until the edges are golden but the centers remain soft.
- Let cool slightly on the tray, then drizzle melted chocolate on top and scatter chopped Reese’s pieces.
Notes
Serve warm with strong coffee or cold milk. Store in an airtight container for up to 3 days or freeze for up to 3 months.
