Preparation
- Preheat your oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well mixed.
- Press this mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 10 minutes, then let it cool.
Make the First Layer Classic Key Lime
- In another bowl, whisk together the sweetened condensed milk, key lime juice, key lime zest, and egg yolks.
- Pour this mixture into the cooled crust and spread it evenly. Bake for 15 minutes, then let it cool.
Make the Second Layer Creamy Lime Cheesecake
- Beat the softened cream cheese until smooth.
- Add the granulated sugar, egg, key lime juice, and vanilla extract, mixing until everything is well combined.
- Spread this cheesecake mixture over the cooled first layer.
Bake the Pie
- Reduce the oven temperature to 325 degrees F (160 degrees C) and bake for 20 to 25 minutes, just until it’s set.
- Allow it to cool to room temperature before refrigerating for at least 4 hours or overnight.
Make the Third Layer Whipped Cream Topping
- When you’re ready to serve, beat together the heavy whipping cream, powdered sugar, and vanilla extract until you form stiff peaks.
- Spread this whipped cream over your chilled pie.
Garnish and Serve
- Sprinkle some additional lime zest on top and decorate with lime slices or twists.
- Slice and enjoy!
Notes
It’s best served cold, straight from the refrigerator. For the best taste, use fresh key limes. Allow the pie to chill for at least 4 hours for the best flavor.
