Ingredients
  

For the custard
  • 1 cup Greek yogurt (unsweetened, 5oz/150g)
  • 1 large egg
  • 1 tbsp honey
  • 1/4 tsp vanilla bean paste (or vanilla extract) Vanilla extract can be used instead.
For the toast
  • 3 slices thick bread Brioche or country loaf is preferable.
  • 1/4 cup blueberries Fresh blueberries for topping.

Method
 

Air Fryer Preparation
  1. Preheat your air fryer to 330–350°F (165–175°C).
  2. In a shallow bowl, whisk together the Greek yogurt, egg, honey, and vanilla until silky and smooth.
  3. Briefly dip each thick slice of toast into the custard mixture — about 5–10 seconds per side — letting the bread soak up the goodness but not fall apart.
  4. Place the slices in a single layer in the air fryer basket (use parchment or a light spray of oil if your basket sticks).
  5. Air fry for about 5–8 minutes, flipping once halfway, until the outsides are golden and the centers are set.
  6. Top with blueberries and a small drizzle of honey before serving.
Oven Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the custard the same way: whisk yogurt, egg, honey, and vanilla in a shallow bowl.
  3. Soak each slice quickly, placing them on the prepared baking sheet.
  4. Bake for 10–12 minutes, or until the edges are golden and the custard feels set in the middle.
  5. You can broil for 30–60 seconds at the end if you like a touch more color—watch closely so it doesn’t brown too fast.
  6. Scatter blueberries on top and finish with honey.

Notes

Store cooled slices in an airtight container in the refrigerator for up to 2 days. Reheat gently in an oven or air fryer at low heat (300°F / 150°C) for a few minutes to bring back that crisp edge.
