Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the softened butter and sugar until fluffy.
  4. Incorporate the egg and vanilla extract, mixing until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until a dough forms.
  6. Press the dough into a pie dish.
Baking
  1. Bake for 20-25 minutes or until golden brown and fragrant.
Icing
  1. Once cooled, mix powdered sugar with milk and food coloring to make the icing.
  2. Decorate the cooled cookie pie with icing as desired.
  3. Allow the icing to set.
