Preparation
- Pat the chicken dry and cut it into even bite-sized pieces.
- In a bowl, mix the yogurt, lemon juice, garlic paste, ginger paste, spices, salt, oil, and red food coloring if desired.
- Add the chicken pieces to the marinade and ensure they are well coated. Let it marinate for at least 1 hour, ideally 2 to 3 hours.
Cooking
- Preheat your oven to 200 degrees C (400 degrees F). Line a tray with foil and place a wire rack on top.
- Arrange the marinated chicken on the wire rack and bake for 15 to 20 minutes, flipping halfway through.
- Broil for an additional 1 to 2 minutes for a smoky char effect.
- Allow the chicken to rest for a few minutes before serving.
Notes
Serve with mint chutney, naan, or rice. Store leftovers in an airtight container in the fridge for 3 to 4 days, reheating gently.
