Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter, at room temperature
  • 2/3 cup granulated sugar
  • 2 large egg yolks
  • 2 teaspoons pure vanilla extract
  • 2.5 cups all-purpose flour
  • 1/2 teaspoon salt
For the Peanut Butter Filling
  • 6 tablespoons unsalted butter, at room temperature
  • 1.25 cups creamy peanut butter
  • 1.25 cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
For the Chocolate Coating
  • 3 bags Ghirardelli dark chocolate melting wafers (10oz each)

Method
 

Cookie Preparation
  1. In a stand mixer, combine butter and sugar, and beat until well combined.
  2. Add egg yolks and vanilla extract, and mix until smooth.
  3. Add flour and salt, and mix until a dough forms.
  4. Turn the dough onto parchment paper, divide into two logs, wrap in plastic wrap, and chill for at least 45 minutes.
Baking
  1. Preheat the oven to 350°F (175°C) and line a cookie sheet with a silicone mat.
  2. Slice the chilled dough into 1/4 inch rounds and reshape into circles if necessary.
  3. Bake for 11-13 minutes until golden brown.
  4. Let cool for 10 minutes on a wire rack.
Filling Preparation
  1. In a bowl, beat together softened butter and peanut butter until smooth.
  2. Add powdered sugar and vanilla, mixing until fully blended.
  3. Pipe or spread filling onto cookies and refrigerate until firm.
Chocolate Coating
  1. Melt the chocolate wafers in a microwave-safe bowl at 30-second intervals, stirring each time.
  2. Dip each cookie in chocolate and place on a baking sheet to set.
  3. Drizzle leftover chocolate over the top if desired.
Storage
  1. Store in an airtight container, with parchment paper between each cookie.

Notes

For variations, experiment with different chocolates or add chopped nuts and spices to enhance flavors.
