Ingredients
  

Cookie Dough
  • 1 cup unsalted butter, softened For a richer flavor, use European-style butter.
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup cocoa powder
  • to taste Sprinkles (optional) For decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together softened butter, powdered sugar, and granulated sugar until light and fluffy.
  3. Fold in vanilla extract.
  4. Gradually mix in flour and salt until just combined.
  5. Divide the dough into two equal parts; mix cocoa powder into one part.
Rolling and Chilling
  1. Roll out both dough portions into rectangular shapes on parchment paper.
  2. Layer the chocolate dough atop the vanilla dough and roll tightly into a log.
  3. Chill the log in the refrigerator for about 30 minutes.
Baking
  1. Slice the chilled log into 1/4-inch thick rounds.
  2. Optionally, sprinkle the edges with colorful sprinkles.
  3. Place slices on a baking sheet and bake for 12-15 minutes until edges are lightly golden.
  4. Allow cookies to cool before serving.

Notes

Store cookies in an airtight container for up to a week. Can freeze the logs before slicing for up to three months.
