Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together softened butter, powdered sugar, and granulated sugar until light and fluffy.
- Fold in vanilla extract.
- Gradually mix in flour and salt until just combined.
- Divide the dough into two equal parts; mix cocoa powder into one part.
Rolling and Chilling
- Roll out both dough portions into rectangular shapes on parchment paper.
- Layer the chocolate dough atop the vanilla dough and roll tightly into a log.
- Chill the log in the refrigerator for about 30 minutes.
Baking
- Slice the chilled log into 1/4-inch thick rounds.
- Optionally, sprinkle the edges with colorful sprinkles.
- Place slices on a baking sheet and bake for 12-15 minutes until edges are lightly golden.
- Allow cookies to cool before serving.
Notes
Store cookies in an airtight container for up to a week. Can freeze the logs before slicing for up to three months.
