Ingredients
  

For the Sweet Potato Rounds
  • 2 medium medium sweet potatoes, sliced into 1/2-inch rounds Slice uniformly for even cooking
  • 1 tbsp olive oil For brushing
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Toppings
  • 8 oz brie cheese, sliced or crumbled Let come to room temperature for smoother melting
  • 1 cup fresh or frozen cranberries Thaw and drain if using frozen
  • 0.5 cup chopped pecans Toast for enhanced flavor

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange sweet potato rounds on the baking sheet, brush lightly with olive oil, and season with salt and pepper.
Baking
  1. Bake for 15-18 minutes until tender and lightly browned.
  2. Remove from oven, top each round with brie cheese, cranberries, and pecans.
  3. Return to oven for another 5-7 minutes until the brie melts and cranberries soften.
Serving
  1. Serve warm from the oven on a platter.

Notes

Cool completely and store in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 8-10 minutes. Avoid microwaving to keep edges crisp.
