Ingredients
  

For the casserole
  • 1 can whole kernel corn, drained
  • 1 can cream-style corn
  • 1 box corn muffin mix (8.5 oz)
  • 1 cup sour cream
  • ½ cup melted butter
  • 2 large eggs
  • 3 tbsp honey (divided)
  • ½ tsp salt

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch dish.
  2. In a bowl, mix muffin mix, both corns, sour cream, butter, eggs, salt, and 2 tbsp honey.
  3. Pour mixture into the greased dish.
Baking
  1. Bake for 45–50 minutes until golden and set.
  2. Drizzle remaining honey on top in the last 5 minutes of baking.
  3. Rest for 5–10 minutes before serving.

Notes

Serve warm alongside roasted meats or vegetables. A pat of butter on top adds indulgence. For added depth, sprinkle cracked black pepper or chives.
