Ingredients
  

For the base mixture
  • 375 ml 375 ml water (COLD) Use cold water for dissolving the sweetener.
  • 5 tbsp 5 tbsp granulated sweetener, of choice Or more to your taste.
  • 5 tbsp 5 tbsp powdered gelatine This helps give marshmallows their texture.
  • 125 ml 125 ml water (HOT) Hot water is needed for dissolving the gelatine.
For flavoring
  • to taste berry essence Optional flavoring.
  • to taste peppermint essence Optional flavoring.
  • to taste rose water Optional flavoring.
  • to taste vanilla extract Optional flavoring.
  • to taste food coloring Optional for color.

Method
 

Preparation of Base
  1. In a saucepan, combine 375 ml of cold water and the granulated sweetener. Heat gently while whisking until the sweetener dissolves and the water is warm.
  2. In a heatproof jug, add 125 ml of hot water and sprinkle the gelatine over it. Whisk until completely dissolved.
  3. Combine the gelatine mixture with the sweetened water and stir until well mixed. Let cool slightly.
Flavoring and Mixing
  1. Divide the mixture into four bowls. Add different flavorings and food coloring to each bowl according to your preference.
  2. Whisk each bowl vigorously until the mixture is light and fluffy.
  3. Pour the mixtures into a lined dish and refrigerate until set.
Serving
  1. Once set, cut the marshmallows into squares or desired shapes, using a knife dipped in warm water for clean cuts.

Notes

Store leftovers in an airtight container in the fridge for up to a week. Dust with powdered sweetener to prevent sticking.
