Ingredients
  

For the crust and topping
  • 16.5 ounces tube of sugar cookie dough Can be replaced with gingerbread dough for a festive flavor.
  • 1 each egg Large egg, beaten.
  • 1 tablespoon vanilla extract Consider using lemon or almond extract for added flavor.
  • 8 ounces cream cheese Should be at room temperature to avoid lumps.
Optional toppings
  • to taste none sprinkles For a colorful presentation.
  • to taste none powdered sugar For dusting before serving.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Prepare your baking dish with non-stick spray.
  3. In a mixing bowl, blend the cream cheese, vanilla extract, and egg on a slow speed.
  4. If the mixture appears chunky, warm the bowl in hot water until smooth.
Assembly
  1. Cut the sugar cookie dough in half.
  2. Press one half into the bottom of the prepared baking dish to form a crust.
  3. Pour the cream cheese mixture over the crust, smoothing it out evenly.
  4. Flatten the remaining cookie dough and layer it over the cheesecake filling.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until golden brown.
  2. Allow to cool for at least an hour before cutting into squares.
Serving
  1. Serve at room temperature with optional sprinkles or powdered sugar.
  2. Refrigerate any leftovers in an airtight container.

Notes

For additional flavor, consider mixing in chocolate chips or crushed nuts into the cheesecake. These bars can be made in advance and stored for up to three days in the refrigerator, or frozen for up to three months.
