Ingredients
  

For the cookie base
  • 2 1/4 cups all-purpose flour (preferably unbleached, scoop and level to measure) Scoop and level for accurate measurement.
  • 1 Tbsp cornstarch Helps achieve a tender texture.
  • 1 tsp baking powder Leavening agent.
  • 1/2 tsp salt Balances sweetness.
  • 1 cup granulated sugar Provides the base sweetness.
  • 2 large eggs (at room temperature) Important for mixing.
  • 1 cup unsalted butter (at room temperature) Creams well with sugar.
  • 1 1/2 tsp vanilla extract Adds flavor.
  • 1/2 tsp almond extract Optional, for added flavor.
For the frosting
  • 2 1/4 cups powdered sugar For sweetness and texture.
  • 1/2 cup unsalted butter (at room temperature) For a creamy texture.
  • 2 - 3 Tbsp heavy cream Adjust for desired consistency.
  • 1 tsp vanilla extract Enhances sweetness.
  • Few drops food coloring (and sprinkles, optional) For decoration, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and butter a 13 by 9-inch baking sheet.
  2. In a bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt.
  3. In an electric mixer, beat together the butter and granulated sugar until creamy.
  4. Add eggs one at a time, blending well after each addition. Then mix in the vanilla and almond extracts.
  5. Gently fold in the flour mixture until just combined, then spread into the prepared baking dish.
Baking
  1. Bake in the preheated oven for 14 to 16 minutes or until puffed and just set.
  2. Allow the bars to cool completely on a wire rack (about 90 minutes).
Frosting
  1. In a separate bowl, combine powdered sugar, softened butter, heavy cream, and vanilla extract, and blend until fluffy.
  2. If desired, add food coloring for a decorative touch.
  3. Spread the frosting over the cooled cookie bars and sprinkle with optional sprinkles.

Notes

Ensure all ingredients are at room temperature for the smoothest blend. Consider alternative extracts for frosting for a different flavor.
