Ingredients
  

For the Cookie Bars
  • 1 cup salted butter, softened Ensure it is softened for better mixing.
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 5 cups all-purpose flour
  • 1/2 teaspoon table salt
  • 1/2 teaspoon baking soda
For the Frosting
  • 1/2 cup butter, softened
  • 4 oz cream cheese, softened Adds a lovely tang.
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 2 tablespoons heavy cream
  • Food coloring & sprinkles (optional) For decoration.

Method
 

Preparation
  1. Preheat your oven to 350°F and prepare a large cookie sheet by spraying it with cooking spray.
  2. In a mixing bowl, cream together the softened butter and sugar for about 2-3 minutes until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then pour in the vanilla extract.
  4. In a separate bowl, combine the flour, salt, and baking soda, then gently add to the wet mixture until just combined.
  5. Spread the dough evenly onto the prepared cookie sheet.
Baking
  1. Bake the bars for 13-16 minutes until the edges are golden brown and the center is slightly puffy. Let cool completely in the pan.
Frosting
  1. Blend together the softened butter and cream cheese until smooth, then add the vanilla and almond extracts.
  2. Gradually fold in the powdered sugar and heavy cream, starting on low speed to avoid a mess, then increase speed to achieve a spreadable consistency.
  3. Spread frosting over cooled cookie bars.

Notes

Store leftover bars in an airtight container at room temperature for up to 5 days. Layer parchment paper between bars to keep them soft. Customize frosting with different flavors if desired.
