Preparation
- Preheat your oven to 350°F and prepare a large cookie sheet by spraying it with cooking spray.
- In a mixing bowl, cream together the softened butter and sugar for about 2-3 minutes until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then pour in the vanilla extract.
- In a separate bowl, combine the flour, salt, and baking soda, then gently add to the wet mixture until just combined.
- Spread the dough evenly onto the prepared cookie sheet.
Baking
- Bake the bars for 13-16 minutes until the edges are golden brown and the center is slightly puffy. Let cool completely in the pan.
Frosting
- Blend together the softened butter and cream cheese until smooth, then add the vanilla and almond extracts.
- Gradually fold in the powdered sugar and heavy cream, starting on low speed to avoid a mess, then increase speed to achieve a spreadable consistency.
- Spread frosting over cooled cookie bars.
Notes
Store leftover bars in an airtight container at room temperature for up to 5 days. Layer parchment paper between bars to keep them soft. Customize frosting with different flavors if desired.
