  • 2 large Eggs
  • 1 tsp Baking soda
  • 2 1/2 cups Cake flour
  • 1/4 cup Cocoa powder, unsweetened
  • 1 oz Gel food coloring, blue
  • 1 1/2 cups Granulated sugar
  • 1/4 tsp Salt
  • 1 Pinch Salt
  • 3 tsp Vanilla extract
  • 1/2 cup Vegetable oil
  • 1/4 cup Unsalted Butter, melted
  • 1 cup Buttermilk
For the Frosting
  • 8 oz Cream cheese, softened
  • 3 cups Powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, whisk together cake flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat the eggs and granulated sugar until light and fluffy, then add blue food coloring.
  4. Incorporate the dry ingredients into the wet mixture, alternating with buttermilk until combined.
  5. Stir in vegetable oil and melted butter until well combined.
Baking
  1. Divide the batter evenly between the prepared pans and bake for 25-30 minutes, checking for doneness with a toothpick.
  2. Once baked, let cakes cool completely on a wire rack.
Frosting
  1. Beat together cream cheese and powdered sugar until smooth and creamy.
  2. Frost the cooled cakes and create decorative swirls.
Serving
  1. Slice the cake and serve on a colorful platter with coffee or cold milk.

Notes

For a colorful explosion, use gel food coloring. Make sure cream cheese is at room temperature for smooth frosting. For extra flavor, add a splash of almond extract.
