  • 1 whole whole turkey breast
  • 1 cup bread crumbs Use day-old bread for the best texture.
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1/4 cup fresh herbs (such as rosemary, thyme, or parsley) Feel free to experiment with different herbs.
  • 1/2 cup chicken broth
  • 1 large egg Used to bind the stuffing.
  • Salt and pepper to taste
  • Olive oil for drizzling

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the onions, celery, and garlic until they soften and become fragrant, about 5-7 minutes.
  3. In a mixing bowl, combine the bread crumbs, fresh herbs, sautéed vegetables, chicken broth, and egg. Season generously with salt and pepper to create the stuffing.
  4. Carefully butterfly the turkey breast with a sharp knife, stopping just before cutting through to create a pocket for the stuffing.
  5. Spread the stuffing evenly over the turkey breast. Roll it up tightly and secure with kitchen twine.
Cooking
  1. Place the stuffed turkey breast in a roasting pan, drizzle with olive oil, and roast in the oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  2. Once cooked, let it rest for about 10-15 minutes before slicing.

Notes

Slice the turkey breast into thick medallions and serve with favorite sides like mashed potatoes, green beans, or cranberry sauce. Store leftovers in an airtight container for up to 3 days.
