Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, sauté the onions, celery, and garlic until they soften and become fragrant, about 5-7 minutes.
- In a mixing bowl, combine the bread crumbs, fresh herbs, sautéed vegetables, chicken broth, and egg. Season generously with salt and pepper to create the stuffing.
- Carefully butterfly the turkey breast with a sharp knife, stopping just before cutting through to create a pocket for the stuffing.
- Spread the stuffing evenly over the turkey breast. Roll it up tightly and secure with kitchen twine.
Cooking
- Place the stuffed turkey breast in a roasting pan, drizzle with olive oil, and roast in the oven for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
- Once cooked, let it rest for about 10-15 minutes before slicing.
