Dough Preparation
- Dissolve the yeast in warm milk with a teaspoon of sugar.
- In a bowl, mix flour, sugar, eggs, and the yeast mixture until smooth. Work it until you have a silky dough.
- Add the salt, then incorporate the softened butter in pieces.
- Fold in the chocolate chips into the dough.
First Rise
- Shape the dough into a ball and let it rise in a covered bowl until it doubles in size (about 2-3 hours).
Shaping
- Divide the dough into balls (about 80 g each) and place them on a baking sheet. Allow them to rise again for 1 hour.
Baking
- Brush with milk or beaten egg and bake in a preheated oven at 180°C for 15-20 minutes.
Whipping Cream
- Whip the very cold cream with the powdered sugar until it forms stiff peaks.
- Gently fold the whipped cream into the cold pastry cream until well combined.
Assembly
- Once the brioche are completely cool, slice them in half horizontally.
- Fill them with the cream mix, create a lovely swirl of cream on top, and sprinkle with chocolate chips for that extra touch of sweetness.
Notes
Use high-quality chocolate chips for a richer flavor. If you like, add a dash of vanilla extract to your cream for a lovely aroma. Allow the brioche to cool completely before filling to ensure the cream doesn’t melt.
