Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons salt
Wet Ingredients
  • 1 cup milk
  • 2 large eggs
  • 0.25 cups melted butter
  • 1 cup fresh strawberries, pureed Reserve some for topping
  • 1 teaspoon vanilla extract
  • to taste whipped cream Optional for serving

Method
 

Preparation
  1. Heat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, eggs, melted butter, strawberry puree, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly lumpy.
Cooking
  1. Spray the waffle iron with non-stick cooking spray. Pour the recommended amount of batter onto the hot waffle iron.
  2. Close and cook until the waffles are golden brown, usually about 4-5 minutes.
Serving
  1. Stack the waffles high and let steam rise between layers. Spoon reserved strawberry puree and extra sliced berries over the top, add whipped cream and a pat of butter.
  2. For a Southern touch, drizzle a little warm maple syrup or honey and serve with hot coffee or chilled sweet tea.

Notes

Cool waffles completely on a wire rack and store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze individual waffles between sheets of parchment in a zip-top bag for up to 1 month.
