Ingredients
  

For the Filling
  • 2 cups fresh strawberries, hulled and diced
  • 1/4 cup granulated sugar adjust to taste
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
For the Pastry
  • 1 package puff pastry (2 sheets), thawed
  • 1 egg beaten for egg wash
  • Powdered sugar for dusting, optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the diced strawberries, granulated sugar, cornstarch, and vanilla extract. Stir gently.
  3. Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into four squares.
  4. Place a spoonful of the strawberry mixture in the center of each pastry square.
  5. Fold each square into a triangle, pinching the edges to seal them tightly.
  6. Brush the tops with the beaten egg.
Baking
  1. Place the turnovers on a parchment-lined baking sheet and bake for about 15-20 minutes, or until puffy and golden brown.
  2. Let them cool before dusting with powdered sugar.

Notes

Serve warm, possibly with vanilla ice cream or whipped cream. Can be prepared in advance; freeze before baking for quick treats later.
