  • 3 cups 3 cups strawberries (fresh or frozen)
For the cookie dough
  • 1 cup 1 cup granulated sugar
  • 2/3 cup 2/3 cup vegan butter (room temperature)
  • 1 teaspoon 1 teaspoon vanilla extract (optional)
  • 1/4-1 teaspoon 1/4-1 teaspoon pink food coloring (or red food coloring, as needed)
  • 2 1/4 cups 2 1/4 cups all-purpose plain flour
  • 1 teaspoon 1 teaspoon baking soda
  • a pinch Pinch of salt (if using unsalted butter)
  • 1/4 cup 1/4 cup granulated sugar (for sprinkling)

Method
 

Preparation of Strawberry Reduction
  1. In a small saucepan over medium heat, cook the strawberries, stirring occasionally until they break down and form a thick, saucy consistency (10 to 15 minutes).
Making the Cookie Dough
  1. In a large bowl, beat the vegan butter and sugar until creamy.
  2. Add the strawberry reduction and vanilla extract, mixing until fully combined.
  3. Gradually add the flour, baking soda, and salt until a dough forms.
  4. Incorporate pink food coloring if desired for a more vibrant color.
Baking the Cookies
  1. Preheat your oven to 350°F (175°C).
  2. Scoop tablespoon-sized amounts of dough onto a lined baking sheet, spacing them evenly apart.
  3. Flatten each cookie slightly and sprinkle with granulated sugar.
  4. Bake for 10 to 12 minutes, or until the edges are golden.
  5. Let the cookies cool on a wire rack before serving.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for up to three months. To enhance the flavor, consider adding lemon zest or cinnamon.
