Ingredients
  

Cookie Base
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Unsalted Butter Softened
  • 1 cup Granulated Sugar
  • 1 cup Powdered Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Almond Extract Optional
Filling and Toppings
  • 1 cup Strawberry Jam or Preserves
  • 1 cup Sprinkles Optional

Method
 

Preparation
  1. Preheat the oven to 350 degrees F (175 degrees C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt; set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and powdered sugar until fluffy, about 3-4 minutes.
  4. Mix in the eggs one at a time, followed by the vanilla and optional almond extracts.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined.
Assembly
  1. Roll tablespoon-sized balls of dough and flatten them slightly.
  2. Create a well in the center of half the cookie discs and spoon in strawberry jam.
  3. Top each filled cookie with another cookie disc and seal the edges by crimping with a fork.
Baking
  1. Bake for 10-12 minutes, until the edges are lightly golden.
  2. Allow to cool on baking sheets for 5 minutes before transferring to wire racks.
  3. Optional: Drizzle with icing and sprinkle with colorful sprinkles.

Notes

Chill the dough briefly if it's too soft; use thick preserves to prevent seepage during baking. For crisp edges, flatten a bit more.
