Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In another bowl, cream together the unsalted butter, granulated sugar, and powdered sugar until fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  5. Gradually add the dry mixture to the wet ingredients, blending well.
  6. Chill the dough for about 30 minutes in the refrigerator.
Baking
  1. Roll out small balls of dough, flatten them a bit, and place a dollop of strawberry jam in the center.
  2. Fold the edges to create a pocket filled with sweetness and seal them tight.
  3. Place them on a parchment-lined baking sheet and sprinkle with your beloved sprinkles.
  4. Bake for about 10-12 minutes, or until golden around the edges.
  5. Let them cool on a wire rack.

Notes

Store your cookies in an airtight container to keep them fresh for about a week. Experiment with different jam flavors or rolls the dough in sprinkles before refrigerating for added texture.
