Strawberry Paris-Brest

Ingredients
  

Choux Pastry
  • 80 grams butter Unsalted
  • 200 ml water
  • 100 g flour All-purpose
  • 3 pieces eggs Large
  • 1 pinch salt
  • 1 teaspoon sugar
Whipped Cream Filling
  • 400 ml very cold liquid cream Heavy cream
  • 60 g sugar Granulated
  • 1 teaspoon vanilla extract
Fruits and Garnish
  • 400 g fresh strawberries Sliced
  • to taste icing sugar For sprinkling
  • to taste mint leaves For decoration

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F).
  2. In a saucepan, bring the water, butter, salt, and sugar to a boil.
  3. Remove from heat and quickly add the flour, mixing vigorously until the dough separates from the sides of the pan.
  4. Let the dough cool slightly, then incorporate the eggs one at a time, mixing well after each addition.
  5. Line a plate with baking paper and shape the dough into a circle about 20 cm in diameter. Optionally, sprinkle grated almonds on top.
Baking
  1. Place the shaped dough in the oven and bake for 30 to 35 minutes without opening the oven.
  2. Once golden and puffy, allow to cool completely on a wire rack.
Filling
  1. Whip the cold cream with sugar and vanilla until firm.
  2. Wash and slice the fresh strawberries.
Assembly
  1. Carefully cut the cooled Paris-Brest in half horizontally.
  2. Spread half of the whipped cream on the bottom half and add the sliced strawberries.
  3. Replace the top half and pipe whipped cream in the center.
  4. Finish with a sprinkle of icing sugar and garnish with mint leaves.

Notes

Serve chilled for best flavor. Pairs beautifully with coffee or tea. Store leftovers in an airtight container in the refrigerator, best enjoyed within a day or two.
