Preparation
- Preheat the oven to 350 degrees.
- In a large mixing bowl, combine the cake mix, eggs, oil, sour cream, and milk. Beat for 1 minute on low speed, then for 2 minutes on medium speed.
- Divide the batter into 2 greased and floured 8-inch baking pans. Bake for 25-27 minutes, or until a toothpick comes out with just a few crumbs.
- Remove from the oven and let cool in the pan for 15 minutes. Flip onto a cooling rack and cool completely.
Making the mousse
- For the mousse, beat the cream cheese until soft. Add 3/4 cup strawberry pie filling and mix. Fold in the Cool Whip.
- Level the cakes. Place one layer on a plate and spread the mousse over it. Top with the second layer. Refrigerate.
Making the frostings
- For the white frosting, beat butter, vanilla, and salt until creamy. Gradually add powdered sugar and 1/4 cup cream. Beat on high for 2 minutes.
- For the chocolate frosting, beat butter, vanilla, and salt until creamy. Gradually add powdered sugar, cocoa powder, and cream. Beat on high for 2 minutes.
Assembly
- Spread the white frosting on top. Spread the chocolate frosting on the sides.
- Smooth the sides with a paper towel after letting the frosting sit for 20 minutes.
- Pipe remaining white frosting around the top and bottom edges. Spoon remaining pie filling on top and decorate with fresh strawberries.
Notes
Be sure to level your cake layers for even stacking. Consider using fresh strawberries in addition to the pie filling for a vibrant topping.
