  • 24 ounces cottage cheese Use small curd for a smoother texture.
  • 20 ounces can pineapple tidbits, drained Can be substituted with mandarin oranges.
  • 16 ounces large fresh strawberries, hulled and sliced Approximately 2 3/4 cups.
  • 8 ounces whipped topping Can be substituted with Greek yogurt for a lighter option.
  • 3 ounces box strawberry jello mix Can use sugar-free jello if desired.
  • 3.5 cups mini marshmallows Halve for a less sweet version.

Preparation
  1. In a large bowl, combine the cottage cheese, pineapple tidbits, sliced fresh strawberries, whipped topping, strawberry jello mix, and mini marshmallows.
  2. Stir well until everything is thoroughly combined.
  3. Serve immediately or refrigerate until ready to serve cold.

Notes

Garnish with halved strawberries and a sprig of fresh mint for presentation. Covers well in the fridge for 2-3 days, but may soften over time.
