Ingredients
  

Main ingredients
  • 1.5 cups unsalted butter, softened Make sure it's at room temperature.
  • 8 oz cream cheese, softened Let it come to room temperature.
  • 3 cups granulated sugar
  • 6 large eggs, room temperature
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract Optional but recommended.
  • 1.5 cups fresh strawberries, finely chopped Toss with flour to prevent sinking.
  • 2 tablespoons all-purpose flour For coating strawberries.
Glaze ingredients
  • 1 cup powdered sugar For glaze.
  • 2-3 tablespoons strawberry puree or milk For consistency.
  • 0.5 teaspoon vanilla extract For glaze.

Method
 

Preparation
  1. Prepare the strawberries by washing, drying, and finely chopping them. Toss with 2 tablespoons of flour to prevent sinking. Set aside.
  2. Cream the butter and cream cheese in a large bowl until smooth and fluffy—about 3 to 5 minutes.
  3. Slowly add the granulated sugar while mixing, beating until pale and creamy.
  4. Add eggs one at a time, mixing well after each addition.
  5. In another bowl, whisk together flour, baking powder, and salt, then gradually add to the wet ingredients until just combined.
  6. Stir in vanilla extract and almond extract. Gently fold in the strawberries.
Baking
  1. Preheat the oven to 325°F (163°C). Grease and flour a bundt pan and spread the batter into the pan.
  2. Bake for 75 to 90 minutes, or until a toothpick comes out clean.
  3. Cool in the pan for 10 minutes before turning onto a wire rack. Allow to cool completely before adding the optional strawberry glaze.

Notes

Serve warm or at room temperature. Add a sprinkle of powdered sugar or enjoy with vanilla ice cream or whipped cream.
