Ingredients
  

Cream Cheese Mixture
  • 2 packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 container frozen whipped topping, thawed (like Cool Whip)
Dessert Layers
  • 2 boxes graham crackers 14.4 ounce each
  • 2 pounds fresh strawberries, hulled and sliced
Glaze
  • 1 cup powdered sugar
  • 3-4 tablespoons milk
  • 1/2 teaspoon vanilla extract (for glaze)
  • 2-3 drops pink or red food coloring (optional, for glaze)

Method
 

Preparation
  1. In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  2. Gently fold in the thawed whipped topping until well combined and fluffy.
  3. In a 9x13 inch dish, lay down a layer of graham crackers.
  4. Spread half of the cream cheese mixture over the graham crackers.
  5. Layer fresh strawberries on top of the cream cheese mixture.
  6. Repeat the layers with the remaining graham crackers, cream cheese mixture, and strawberries.
  7. In a small bowl, whisk together powdered sugar, milk, vanilla extract, and food coloring until smooth.
  8. Drizzle the glaze over the assembled dessert.
Refrigeration
  1. Refrigerate the dessert for at least 4 hours, preferably overnight.

Notes

For extra flavor, add a splash of lemon juice to the cream cheese mixture. Ensure cream cheese is fully softened for best results. Leftovers can be stored in an airtight container for up to three days.
