Preparation of Cream Cheese Filling
- In a medium bowl, combine softened cream cheese, 1/4 cup of granulated sugar, and 1 tsp of vanilla extract. Use an electric mixer to beat until smooth.
- Refrigerate the cream cheese mixture while proceeding to make the cookie dough.
Preparation of Cookie Dough
- In a large bowl, cream together the softened butter, 1 cup of granulated sugar, and 1/2 cup of brown sugar until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in 2 tsp of vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix this into the creamed mixture until well combined.
- Gently fold in the strawberry jam or fresh pureed strawberries.
Baking Cookies
- Scoop a generous spoonful of dough and make an indentation in the middle.
- Place a dollop of cream cheese mixture in the indentation.
- Bake at 350°F (175°C) for about 12 to 15 minutes, or until edges are lightly golden.
- Let cool slightly and dust with powdered sugar if desired before serving.

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
