Ingredients
  

For the cookie dough
  • 1 cup unsalted butter, softened Make sure butter is at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs Add one egg at a time.
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour Sift before measuring for accuracy.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup strawberry jam or fresh pureed strawberries Can use fresh strawberries for a fruity bite.
For the cream cheese filling
  • 8 oz cream cheese, softened Make sure cream cheese is at room temperature.
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
Optional
  • Powdered sugar for dusting For finishing touch.

Method
 

Preparation of Cream Cheese Filling
  1. In a medium bowl, combine softened cream cheese, 1/4 cup of granulated sugar, and 1 tsp of vanilla extract. Use an electric mixer to beat until smooth.
  2. Refrigerate the cream cheese mixture while proceeding to make the cookie dough.
Preparation of Cookie Dough
  1. In a large bowl, cream together the softened butter, 1 cup of granulated sugar, and 1/2 cup of brown sugar until smooth.
  2. Add eggs one at a time, mixing well after each addition. Stir in 2 tsp of vanilla extract.
  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix this into the creamed mixture until well combined.
  4. Gently fold in the strawberry jam or fresh pureed strawberries.
Baking Cookies
  1. Scoop a generous spoonful of dough and make an indentation in the middle.
  2. Place a dollop of cream cheese mixture in the indentation.
  3. Bake at 350°F (175°C) for about 12 to 15 minutes, or until edges are lightly golden.
  4. Let cool slightly and dust with powdered sugar if desired before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months.
