Ingredients
  

For the crust
  • 8 pieces Oreo cookies Crushed into crumbs
For the cheesecake filling
  • 8 ounces package cream cheese, softened Soften at room temperature for 30-60 minutes
  • 2 tablespoons granulated sugar
  • 1 cup diced strawberries Pureed with other ingredients
  • 2 tablespoons hot water
  • 1 packet unflavored gelatin Helps set the parfait
For the topping
  • 21 ounces can strawberry pie filling
  • 1 batch homemade whipped cream Set aside some for decoration
  • to taste mini Oreos, wafer cookies, sprinkles (for garnish) Add before serving

Method
 

Preparation
  1. Crush the Oreo cookies and spoon the crumbs into the bottoms of 8 dessert cups.
  2. Mix the softened cream cheese and granulated sugar until smooth and creamy.
  3. Puree the diced strawberries in a food processor with the hot water and gelatin until smooth.
  4. Beat the pureed strawberries into the cream cheese mixture until evenly combined.
  5. Gently fold in 0.5 cup of the whipped cream.
Assembly
  1. Divide the cheesecake mixture into the dessert cups and spread flat atop the cookie crumbs.
  2. Spoon the strawberry pie filling onto the tops of the cheesecake layers.
  3. Pipe the remaining whipped cream on top in delicate swirls.
  4. Refrigerate for at least 1 hour to set.
Garnish and Serve
  1. Add mini Oreos, wafer cookies, and sprinkles just before serving.
  2. Serve chilled for the best texture.

Notes

For best texture, store cookie crumbs separately and assemble just before serving. Avoid freezing the parfaits.
