Ingredients
  

For the crust
  • 30 pieces Golden Oreo Cookies Crumbled to fine crumbs
  • 5 tablespoons unsalted butter, melted
For the cheesecake filling
  • 2 packages 8 ounce cream cheese, softened Ensure adequately softened
  • 1 1/3 cups powdered sugar
  • 1 cup plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 large eggs Added one at a time
For the topping
  • 1 can 21 ounce strawberry pie filling
  • 1/2 cup old fashioned oats
  • 1/3 cup packed light brown sugar
  • 2 tablespoons unsalted butter, softened Cut in for topping

Method
 

Preparation
  1. Preheat the oven to 350°F. Spray a 9×13 pan with nonstick baking spray.
  2. Using a food processor, crumble the cookies with cream filling until they are fine crumbs. Pour in the melted butter and stir until combined. Press the mixture firmly in the prepared pan.
  3. Beat the cream cheese and powdered sugar until smooth and creamy. Add vanilla and Greek yogurt, mixing again. Introduce one egg at a time, mixing slowly to avoid overbeating.
Assembly
  1. Pour the cream cheese filling onto the prepared crust, spreading it out evenly.
  2. Spoon the strawberry pie filling over the cheesecake layer and gently swirl with a butter knife to create a beautiful marbled effect.
  3. In a small bowl, mix together the oats and brown sugar. Cut in the softened butter until crumbly, then sprinkle it evenly over the pie filling.
Baking
  1. Bake for 55-60 minutes or until the topping is golden brown. Allow the bars to cool to room temperature, then cover and refrigerate for 4-5 hours or until completely chilled.

Notes

These bars can be served chilled or garnished with fresh strawberries or chocolate sauce. Store leftovers in an airtight container in the refrigerator for up to five days, separated by parchment paper.
