Ingredients

Cookie Ingredients
  • 1 box 15.25 ounce box strawberry cake mix
  • 2 pieces eggs Use room-temperature eggs for easier incorporation.
  • 1/3 cup oil Can substitute with melted butter for a richer flavor.
  • 1 cup mini chocolate chips Mini chips dispensed evenly; avoid full-sized chips.

Method

Preparation
  1. Preheat oven to 350°F and line two baking sheets with parchment paper or a silicone baking liner.
  2. In a large bowl, combine cake mix, eggs, and oil. Stir until fully incorporated with no dry clumps.
  3. Gently stir in chocolate chips until just combined.
  4. Using your hands or a medium cookie scoop, form 2-inch balls with the cookie dough.
  5. At this point, you can freeze the portioned cookie dough for baking later.
Baking
  1. Place the formed cookie dough balls on large baking pans, spacing them 1–2 inches apart.
  2. Bake at 350°F for 12 minutes, until edges are starting to brown and the middle is still soft.
  3. Remove from the oven and let cool on a cooling rack.

Notes

Serve warm for the best texture; pair with confectioners' sugar or white chocolate drizzle. Store in an airtight container for up to 3 days or freeze for 2 months.
