Method
Preparation of crust
- In a bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.

- Press the mixture into a disc, wrap it, and chill in the fridge for one hour.
Prepare mascarpone snow
- Blend the mascarpone with powdered sugar, vanilla bean paste, and lemon zest until smooth.
- Freeze the mixture into a block for about four hours.
Prepare filling
- In a bowl, combine hulled strawberries, granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, vanilla extract, cracked black pepper, and sea salt.
Assemble galette
- Roll out the chilled dough on parchment paper into a 14-inch circle.
- Lay the strawberry filling in the center, leaving a 3-inch border.
- Fold and pleat the dough over the filling.
Bake
- Brush the exposed crust with a mixture of beaten egg and cream.
- Sprinkle the edges with turbinado sugar and cracked black pepper.
- Bake in a preheated oven at 400°F for around 45 minutes.
Finishing touches
- Allow the galette to cool for about 10 minutes.
- Use a microplane to layer mascarpone snow over the galette.
- Garnish with fresh basil, edible flower petals, cracked pepper, and flaky sea salt.
