Ingredients
  

For the crust
  • cups all-purpose flour Ensure it's fresh
  • 2 tbsp granulated sugar
  • ¾ cup unsalted butter, ice cold and cubed Key for flaky texture
  • 1 large egg yolk
  • 3 tbsp ice cold water
  • 1 tsp apple cider vinegar
  • ¼ tsp fine sea salt
For the filling
  • 4 cups fresh strawberries, hulled and halved Use ripe berries for best flavor
  • cup granulated sugar
  • 3 tbsp brown sugar
  • 1 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp pure vanilla extract
  • 1 tsp cracked black peppercorns Adds an unexpected warmth
  • ¼ tsp fine sea salt
For the topping
  • 1 large egg, beaten For brushing the crust
  • 1 tbsp heavy cream To mix with the egg for brushing
  • 2 tbsp turbinado sugar For crust texture
  • ½ tsp cracked black pepper
  • 8 oz mascarpone cheese For the mascarpone snow
  • cup powdered sugar
  • 1 tsp pure vanilla bean paste
  • 1 tbsp lemon zest
Garnishing
  • Fresh basil leaves For decoration
  • Tiny edible white flower petals For decoration
  • 1 tsp cracked black pepper For topping
  • Flaky sea salt For sprinkling

Method
 

Preparation of crust
  1. In a bowl, whisk together the flour, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Mix in the egg yolk, ice cold water, and apple cider vinegar.
  4. Press the mixture into a disc, wrap it, and chill in the fridge for one hour.
Prepare mascarpone snow
  1. Blend the mascarpone with powdered sugar, vanilla bean paste, and lemon zest until smooth.
  2. Freeze the mixture into a block for about four hours.
Prepare filling
  1. In a bowl, combine hulled strawberries, granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, vanilla extract, cracked black pepper, and sea salt.
Assemble galette
  1. Roll out the chilled dough on parchment paper into a 14-inch circle.
  2. Lay the strawberry filling in the center, leaving a 3-inch border.
  3. Fold and pleat the dough over the filling.
Bake
  1. Brush the exposed crust with a mixture of beaten egg and cream.
  2. Sprinkle the edges with turbinado sugar and cracked black pepper.
  3. Bake in a preheated oven at 400°F for around 45 minutes.
Finishing touches
  1. Allow the galette to cool for about 10 minutes.
  2. Use a microplane to layer mascarpone snow over the galette.
  3. Garnish with fresh basil, edible flower petals, cracked pepper, and flaky sea salt.

Notes

For the best flavor, ensure the butter is ice cold and consider experimenting with fruit fillings. Store any leftovers in the fridge for up to three days.
