Ingredients
  

For the Pudding
  • 1 1/4 cups dates Medjool dates bring the best sweetness.
  • 1 1/4 cups boiling water
  • 1 tsp bicarbonate soda
  • 2 tbsp butter
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup self-raising flour
  • 2 tsp mixed spice or garam masala Optional for flavor.
For the Butterscotch Sauce
  • 1 cup brown sugar
  • 300 ml cream
  • 100 g butter
  • 1 big pinch salt

Method
 

Preparation
  1. In a blender, combine the dates, boiling water, and bicarbonate soda. Let it chill for 5 minutes.
  2. Add the butter and brown sugar to the blender and blend until combined.
  3. Add the self-raising flour, eggs, and mixed spice, and blend until you have a silky batter.
  4. Pour the mixture into a lined cake tin.
Cooking
  1. Bake in an oven preheated to 180°C (350°F) for about an hour.
  2. To prepare the butterscotch sauce, mix brown sugar, cream, and butter in a microwave-safe bowl. Microwave for 4 minutes, stirring every minute.
  3. Stir in the pinch of salt into the butterscotch sauce.

Notes

Serve warm with the butterscotch sauce on top; add whipped cream or vanilla ice cream for extra indulgence. Store leftovers in an airtight container in the fridge for up to three days.
