Ingredients
  

For the cookies
  • 150 g salted butter, softened
  • 125 g dark brown sugar, firmly packed
  • 75 g caster sugar
  • 1 large egg
  • 300 g plain flour
  • 0.5 tsp ground cinnamon
  • 0.5 tsp bicarb soda
  • 0.5 tsp baking powder
  • 270 g medjool dates, seeded, chopped
  • 135 g Werther's Original Chewy Toffees, halved

Method
 

Preparation
  1. Beat the butter, sugars, and egg in a stand mixer bowl until well combined.
  2. Sift over the flour, cinnamon, bicarb, and baking powder; mix until just combined.
  3. Add dates and mix slowly until just combined.
  4. Chill the dough for 2 hours or overnight to help develop the flavors.
Baking
  1. Preheat the oven to 200°C/180°C fan forced and line 2 baking trays with baking paper.
  2. Roll 2 tablespoon-measures of cookie dough into balls, pressing 2 half toffees into each ball until enclosed.
  3. Place on prepared trays, spacing 4cm apart, and press down each ball until about 2cm thick.
  4. Bake for 15 minutes or until golden.
  5. Cool slightly on trays and serve warm or cooled.

Notes

These cookies are best enjoyed fresh from the oven, paired with a glass of cold milk or coffee. For enhanced indulgence, consider drizzling caramel sauce before serving.
