Ingredients
  

Brownie Base
  • 1 box chocolate brownie mix (plus ingredients listed on box) Use any preferred brand of brownie mix.
  • 1 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
Frosting and Toppings
  • 1 cup vanilla frosting
  • 3-4 drops green food coloring Adjust based on desired color intensity.
  • 1/2 cup rainbow sprinkles or funfetti
  • 1/2 cup mint chocolate candies, chopped (optional) Optional for extra minty flavor.

Method
 

Preparation
  1. Preheat oven according to brownie mix package directions. Grease or line a 9x13-inch baking pan.
  2. Prepare brownie batter as directed on the box.
  3. Stir in peppermint extract and chocolate chips.
Baking
  1. Pour batter into prepared pan and bake according to package instructions.
  2. Allow brownies to cool completely.
Frosting
  1. In a small bowl, mix vanilla frosting with green food coloring until evenly tinted.
  2. Spread the green frosting evenly over cooled brownies.
  3. Sprinkle generously with rainbow sprinkles and chopped mint candies, if using.
  4. Chill for 30 minutes to set frosting before slicing into squares.

Notes

For serving, cut into generous squares and pair with milk or coffee. Store in an airtight container at room temperature for 2 days or in the fridge for 4-5 days. Can be frozen for up to 2 months.
