Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the softened butter and granulated sugar until fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients until a cohesive dough forms.
- Divide the dough into three equal parts and color each with food coloring.
- Roll each colored dough into logs and flatten into rectangles.
- Stack the rectangles, roll into a log, and chill in the refrigerator for about an hour.
Baking
- Once firm, slice the log into cookies and place them on a baking sheet lined with parchment paper.
- Sprinkle with additional sugar if desired.
- Bake for 10-12 minutes until the edges are lightly golden.
- Allow the cookies to cool on a wire rack.

Store cookies in an airtight container for up to a week. Use parchment to layer between cookies to preserve colors.
