  • 3/4 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract (or almond extract for a twist)
  • Gel food coloring in orange, purple, and black
  • Optional: colored sanding sugar or Halloween sprinkles For garnish

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter and sugar together until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until a smooth dough forms.
  6. Divide the dough into three equal portions.
  7. Tint each portion with orange, purple, and black food coloring.
  8. On a lightly floured surface, roll each colored dough into thin sheets, layering them on top of one another.
  9. Carefully roll the stacked dough into a log and slice the log into pinwheel-shaped cookies.
  10. Place the cookies on your prepared baking sheets and bake for 10-12 minutes, or until the edges are golden.
  11. Let them cool on wire racks before serving.

Notes

Be patient while rolling the dough; a gentle hand keeps the colors from blending too much. Chill the dough in the refrigerator for about 30 minutes if it becomes too soft to handle. Sprinkle on colored sanding sugar before baking for extra crunch.
